In an unusual twist of the norm, our personal trainer is a foodie like us!
Each weekend Scott and I visit our personal trainer who usually works us so hard that we are either a) too exhausted to speak at the end of the session, or b) feeling like the drive home could be slightly perilous. He usually asks us what we have eaten that week and will give us tips on what we can do to make our eating habits better (like replace jasmine or brown rice for basmati if you are watching your weight).
While he helps us with what we could be eating better, the BEST thing about him is that he loves to cook and understands that every now and again you just have to order the stuffed zucchini flowers!
A short while back he started talking about this amazing chilli curry paste recipe he has and how on occasion he will make up a big batch of it and pop it in the freezer to use whenever he feels the desire. Well, he has now taken to giving us a little of this pasty gold every now and again to experience for ourselves.
So last weekend we got it out of the freezer to cook up a little prawn and coconut curry.
Now, I can’t give you the paste recipe as we don’t have it and if we did I likely wouldn’t be able to post it – D, if you are reading this… I believe you may have said we could have it soon š – but I can tell you what Scotty did with it should you stumble across your own tasty paste.
PRAWN COCONUT CURRY
SauteĀ some onion in a large fry pan and then add the paste. Cook the paste to release the flavours into the pan then add some lovely fresh prawns and cook halfway. Add a tin of coconut cream and simmer until thickened. At the last minute throw in some juliennedĀ carrots until tender and season with salt & pepper.
Serve with rice, coriander and a wedge of lime – Yum!
