Starting to write a post about chocolate cookies is surprisingly hard I have just realised…
I mean, what do you say about something that is so easy to make and tastes so damn good.
I’m going to start with the reason for baking them…
I had a work friend and her husband coming over on Saturday to visit us. This visit was largely due to me raving about how great Pino’s Dolce Vita Fine Foods is and they wanted to see it for themselves. They were arriving in the afternoon and so coffee was on the cards. I was very excited to have a new espresso machine to show off but knew I needed something sweet to serve too.
It’s always nice to offer something homemade to visitors but I usually have this thought at the last minute, so I had to rely on what was already in the kitchen for a little sweet treat. It only took about 30 seconds with my head in the pantry to realise that I could make some great walnut and dark chocolate cookies with the bits and bobs.
I’m going to continue with how great they were…
They were seriously good because:
a) When they came out of the oven Scotty and I kept tasting them just to confirm how extra awesome they were.
b) When our friends arrived we each consumed 3 or 4 of them in quick succession.
c) I had to give our guests all of the remaining cookies, so I wouldn’t make myself sick eating them.
d) They didn’t say “no” to taking all of the cookies.
THAT’S how great they were.
Then I’ll finish with the recipe:
WALNUT AND DARK CHOCOLATE COOKIES
125g butter, softened
1/2 cup brown sugar
1 egg
1 cup plain flour
1/2 cup self raising flour
200g good-quality dark chocolate chips
150g walnuts, coarsely chopped
Beat butter and sugar until very well combined. Then add egg and beat again until combined. Sift in flour and stir with a wooden spoon until well combined. Add chocolate chips and walnuts and stir to combine.
Roll tablespoon sized balls with the cookie mixture. Place the balls, 3cm apart, on baking trays. Flatten slightly with your hand and place in oven. Bake for 20 minutes, swapping the trays halfway through cooking, until light golden.
Remove from oven and set aside to cool on the trays for 5 minutes. Transfer cookies to a wire rack to cool completely.

You just can't beat classic combinations sometimes. Oddly enough, this might actually be the solution to a little rift with mycosmetic dentist from melbourne. I'd be willing to brush my teeth more often if it ensures that I can keep eating these cookies.
