There is something very special about waking up in the morning to a pot full of yoghurt that you’ve made yourself overnight. It tastes better than any store bought yoghurt and makes you want yoghurt for breakfast every morning.
I don’t want you to continue reading this post believing I keep chickens, tend a large kitchen garden or make homemade versions of everything – because while I might like to do those things one day (in my future country residence), presently I’m time poor and only choose the homemade items that require little to no effort.
Yoghurt is one of those items. I make it once a week for a week’s worth of breakfasts. I’m not going to give you the ‘recipe’ because its too easy for that, but the version I make is with long life milk, powdered milk and yoghurt culture all popped into a yoghurt machine and left overnight. If you are keen to try making your own yoghurt – you can buy a yoghurt machine and culture from the Cheesemaking Workshop here where I get mine.
With an abundance of yoghurt comes the desire to get creative with morning breakfasts. This layered strawberry and banana yoghurt parfait is the perfect healthy weekend brunch (or dessert). The finely diced bananas and strawberries make it extra special but really it takes very little time to make.
Strawberry and Banana Yoghurt Parfait
Ingredients
- 1 cup toasted muesli
- 2 cups natural or greek yoghurt
- 10 strawberries, diced
- 1 banana, diced
- 1 tablespoon maple syrup
Directions
To make the parfait layer the ingredients into each glass in the following order:
- 1/3 cup of toasted muesli
- 1/3 cup yoghurt
- 1/2 of the diced strawberries (reserving some for the top of each glass)
- 1/3 cup yoghurt
- 1/2 of the diced banana (reserving some for the top of each glass)
- Drizzle 1/2 maple syrup over banana
- 1/3 cup yoghurt
- Half the remaining toasted muesli for the top
- Remaining banana and strawberries to garnish
Serve immediately.

I wish I knew how to fix homemade yogurt! That’s on my to-do list, although I had no idea you could buy a yogurt maker. I could too! Sometimes I feel like dessert after dinner and so I have a little more yoghurt and honey to cap off the night. I think I eat TOO much yoghurt.
