If you’ve been playing along at home (and I’m assuming you all have been, of course), then in your cupboard right now you will have a batch of Chew Town’s Mexican Chili Spice Mix sitting there and waiting for the recipes to begin. And begun they have, with this simple and delicious recipe for Mexican Chili Wings with Avocado Yoghurt Sauce.
Supposing there is a handful of you that haven’t made up the spice mix yet, now is the time. The recipe has only ingredients you can pronounce and it tastes much better than any store bought Mexican packet mix. A little warning though, if you don’t like chili you’ll need to seriously alter the chili inclusion, as this spice mix is Hot Hot Hot – just the way we like it.
Starting off easy is the best way to do it, so if your spice mix is already made then I can hardly call this a recipe. Making the avocado yoghurt sauce is about as much effort as you need to exert for this recipe – and let’s face it, it’s simply avocado, yoghurt and lime. You’ll need it though as it counteracts the heat of the Mexican chili wings beautifully, much like a raita is sublime with your Indian curries.
These Mexican chili wings wings would be perfect cooked outside on a charcoal grill, but if the weather isn’t so great outside, a cast iron grill plate on your cooktop would still work beautifully (that’s how I’ve made these babies).
A little tip when using the spice mix: if you measure out the amount you will need for your recipes and add a little rice flour or cornflour to the mix, it will help to adhere the spice mix to the meat or vegetables that you are putting it on. That way when you grill your Mexican chili wings the spice mix will stay on the meat and not on your grill.
Mexican Chili Wings with Avocado Yoghurt Sauce
Ingredients
Chicken Wings
- 2kg chicken wings, drumettes and flats (with or without tips) separated
- 1/4 cup Mexican Chili Spice Mix
- 1 tablespoon rice flour
- Olive oil spray
Avocado Yoghurt Sauce
- 1 whole avocado, mashed with a fork
- 1/2 cup greek yoghurt
- Juice of 1/2 lime
- Salt and pepper, to taste
Directions
Add the spice mix and rice flour to a large zip lock bag, then add the chicken wings and seal. Shake well until the spice mix coats each wing piece then set aside.
Preheat a cast iron grill pan or your BBQ over a medium high heat, then spray well with olive oil (or brush olive oil on if you don't have olive oil spray). Add the wings to the grill and cook turning occasionally for 25-30 minutes or until the chicken is golden on the outside and no longer pink inside.
Meanwhile, combine the Avocado Yoghurt Sauce ingredients in a bowl and set aside in the fridge.
When the wings are cooked, serve immediately with the avocado yoghurt sauce.
