Sunday is a lazy day. It’s a day where if you can avoid going to the supermarket it is extremely ideal.
Planning what to eat tonight in an attempt to not leave the house, we decided to pull one of the lasagnas out of the freezer (made a few posts ago) and cook that up. But what to have for dessert?
Another skill I long to attain is the ability to make something great from what is already in the house. Rifling through the fridge and pantry I managed to source flour, butter, lemons, icing sugar and custard powder. It wasn’t much so I was doubtful I would come up with anything to make. After consulting Google with my ingredients I found a recipe for melting moments that required exactly those ingredients – what luck!
MELTING MOMENTS
Ingredients:
125g butter, softened
3/4 cup plain flour
1/4 cup icing sugar
1/3 cup custard powder
60g butter, softened, extra
2 tsp finely grated lemon rind
1 tbs lemon juice
Preheat oven to 160°C. Line 2 oven trays with baking paper. Use an electric mixer to beat butter until pale and creamy. Add the flour, icing sugar and custard powder and use a wooden spoon to stir to combine.
Use your hands to roll teaspoonsful of the dough mixture into balls. Place the balls 3cm apart on the lined trays. Use a fork dusted in icing sugar to gently flatten. Bake in preheated oven, swapping trays halfway through cooking, for 15 minutes or until just cooked through. Remove from oven and set aside for 30 minutes to cool.
Now, I’ve had many a good melting moment in my time (as has Scotty D) but when fresh they are truly something else.
